Home / Products / Brown rice flour
Brown rice flour is a gluten-free product milled from brown rice. It has a light brown colour and a delicate, slightly nutty taste. The particle size is consistent batch after batch, and the flour disperses evenly in dry blends.
Ideal for gluten-free breads, pancakes, cookies and breading, and for thickening soups and sauces.
Kaskad LLC produces brown rice flour wholesale from the manufacturer at its own mill in Karlivka, Ukraine. The plant has been running since 2001, and production runs to the customer's technical brief: particle size, moisture and pack format are set to suit your line and your recipe. The position is produced in two technology lines — Standard and Super / Super+. Gluten content is below 20 ppm, the pack format is 30 and 50 kg bags, and shelf life is 18 months. Production is certified to ISO 22000:2018, holds an AOECS licence for the Crossed Grain symbol and a kosher certificate.
A sample is free — up to 5 kg, made in 5 days. The minimum order is one bag.
The parameters below are the requirements of the normative document: the guaranteed specification, the limit a batch never crosses. Measured results differ from batch to batch, so they are not published here — they are stated in the quality passport for your specific batch.
| Parameter | Norm per TU |
|---|---|
| Passing a 160 µm sieve (No. 38) | not less than 60% |
| Retained on a 250 µm sieve (No. 27) | not more than 2% |
| Moisture | not more than 15.0% |
| Ash content, dry matter basis | not more than 0.75% |
| Metal impurities | not more than 3.0 mg/kg |
| Grain-store pest infestation | not permitted |
A quality passport with the measured values travels as a separate document with every batch. Results stay inside the norm with room to spare, but that margin moves batch to batch: the norm is the guarantee, the passport is the evidence for your batch.
The moisture norm for flour is 15.0% maximum — the "flour" row of the relevant TU, which must be kept apart from the "semolina" row, where the norm differs. The Standard line runs at exactly that limit.

The nutritional data shown are average values. Depending on the origin of the product, they may differ from the actual figures.
That wording is printed on the pack marking and applies specifically to nutritional data. The normative document allows a ±20% tolerance against the tabulated values (Annex A). The evidence for your batch is the quality passport or manufacturer's declaration supplied with the shipment.
The profile that separates brown rice from white. There is twice the fat here — 2.9 against 1.4 g — and noticeably more protein: 7.9 against 6.0 g per 100 g. Hence the light brown colour, the nutty note, and the highest energy value in the range: 1548 kJ / 370 kcal. Sugars at 0.0 g and salt at 0.0 g mean the flour brings neither sweetness nor sodium into the recipe.
Gluten content is below 20 ppm. The normative document a batch was produced against is stated in its quality passport: the company holds six of its own TU, and for rice raw material these are TU U 15.6-31680679.001-2002 "Rice flour" and TU U 10.6-31680679-003:2013 "Flour from cereal and vegetable groats and nut kernels".
The industries this position is mapped to in our applications catalogue are listed in the table below. The list is shorter than rice flour's, and that is no omission: the set follows the technological profile of the raw material.
| Industry | Role in the recipe | Suggested line |
|---|---|---|
| Baby food | porridges, purées and dry mixes on a gluten-free base | Super / Super+ |
| Dietary and sports nutrition | dry mixes, bars and porridges | Standard / Super+ |
The suggested line in the table is a starting point; it is fixed in the specification after a trial run.
Baby food. What works here is the pairing of line and certificate scope: microbiological limits are agreed in your specification, and ISO 22000:2018 No. ODS-397/QS names baby food in its scope explicitly. Where requirements are tighter still, there is the separate DKh line under its own TU — rice flour DKh and buckwheat flour DKh.
Dietary and sports nutrition. 7.9 g of protein at 0.0 g of sugars is a profile that carries the protein share of a blend without adding sweetness. Where a recipe needs more protein, it is brought in through chickpea flour or red lentil flour without changing the base.
Baking, breading and thickening. Per the catalogue entry the position goes into bread, pancakes, cookies, breading mixes, soups and sauces. Here colour and taste decide rather than protein: the light brown shade and nutty note read as a product characteristic, not an off-note.
Brown rice flour wholesale from the manufacturer ships in 30 and 50 kg bags. The minimum order is one bag, and from there batches are made up in multiples of the pack format to fit your production schedule. Price and lead time are calculated once you tell us the flour type, the volume and the pack format.
| Parameter | Value |
|---|---|
| Pack format | 30 and 50 kg bags |
| Minimum order | one bag |
| Batch volume | made up in multiples of the pack format, to the customer's production schedule |
| Sample | free, up to 5 kg, made in 5 days |
| Production to brief | yes — particle size, moisture and pack format are set to the customer's technical brief |
| Supply territory | Ukraine and export |
| Private label | yes, private label production under the customer's own brand |
| Batch documents | quality passport or manufacturer's declaration as standard; Certificate of Analysis (COA) on request |
| Production | own mill in Karlivka, Poltava region, operating since 2001 |
A bag is a fixed-volume container, so a bulkier flour fits in at a lower mass: oat flour, for instance, goes in at 25 kg in the same 30 kg sack. Brown rice is not one of the bulky positions and ships at full weight. The entry threshold is deliberately low — a free sample of up to 5 kg, made in 5 days, then an order from a single bag, with no tonnage contract.
The shelf life of brown rice flour is 18 months from the batch production date. That is one of the longer terms in the range: corn flour, by comparison, keeps for 12 months. In the DKh line under TU U 15.8-31680679-002:2007 (rice flour DKh and buckwheat flour DKh) the term is 6 months — the shorter figure follows from the tighter requirements that apply to a baby-food ingredient.
Storage conditions per the normative document: store in dry, well-ventilated premises free from grain-store pests.
Gluten-free material additionally follows the AOECS scheme, which controls cross-contamination from intake through to packing. In your warehouse that means storage separated from gluten-containing material and dedicated handling equipment.
The position is produced under three certification schemes, and every batch carries its own document — enough to put the material into a recipe without running your own supplier validation programme.
ISO 22000:2018. Certificate No. ODS-397/QS, issued by ICEC Certification on 19 September 2025, valid until 19 September 2028. Scope, document numbers and limits — quality and certification.
AOECS Crossed Grain. Licence UA-001, certificate No. UA0012026, valid until 6 February 2027. Gluten content is below 20 ppm, and that is the figure declared for brown rice flour.
Kosher. Certificate issued by The Jewish Community of Dnipro, Kosher Department, on 17 February 2026. Relevant for customers with kosher recipe requirements and for export markets.
Batch documentation. As standard, a batch travels with a quality passport or manufacturer's declaration carrying the measured values for the TU parameters — moisture, ash content, particle size, metal impurities, pest infestation. A COA is issued on request. More on our ISO 22000, AOECS and Kosher certificates on the company page.
Brown rice is chosen when a recipe needs a gluten-free base with more protein and more colour of its own than white rice provides. A comparison by nutritional value per 100 g — every figure taken from the pack marking of that position.
| Position | kJ / kcal | Fat (sat.) | Carbohydrate (sugars) | Protein | Shelf life | Lines |
|---|---|---|---|---|---|---|
| Brown rice flour | 1548 / 370 | 2.9 (0.54) | 76.5 (0.0) | 7.9 | 18 months | STD, SUP |
| Rice flour | 1531 / 366 | 1.4 (0.4) | 81.0 (0.1) | 6.0 | 18 months | STD, TXT, SUP |
| Oat flour | 1372 / 328 | 2.0 (0.32) | 71.7 (1.5) | 10.25 | 12 months | STD, TXT |
| Corn flour | 1385 / 331 | 1.5 (0.2) | 72.1 (1.3) | 7.2 | 12 months | STD, TXT, SPC |
Three things worth taking from that table. 1548 kJ / 370 kcal is the highest energy value in the range. Sugars at 0.0 g keep sweetness entirely under your control. And choosing between brown and white rice is a choice about colour, taste and protein rather than shelf life: both keep for 18 months.
For full neutrality and maximum carbohydrate the answer is rice flour, 81.0 g carbohydrate and 6.0 g protein. For the same raw material at a coarser grind — rice semolina, produced only in the Super and Super+ lines.
The complete list is in the full range of gluten-free flours available wholesale: 15 positions, each with its own set of technology lines and its own shelf life.
Yes. We are the manufacturer: brown rice flour is milled at our own mill in Karlivka, Poltava region, operating since 2001, and we supply Ukraine and export. It ships in 30 and 50 kg sacks; the minimum order is one sack, and larger volumes are made up in multiples of the pack format. A free sample of up to 5 kg is made in 5 days. Each batch comes with a quality passport or manufacturer's declaration; a COA is issued on request. Leave your name and phone number, with the volume and the destination country in the comment — a manager will call you the same working day.
The norm under the TU is not less than 60% passing a 160 µm sieve and not more than 2% retained on a 250 µm sieve; measured values for your batch are in the quality passport. Production runs to a technical brief, so the grind can be set to your recipe and fixed in the batch specification after a trial run.
Fat and protein are the main differences. Brown rice carries 2.9 g of fat against 1.4 g and 7.9 g of protein against 6.0 g per 100 g, with less carbohydrate — 76.5 against 81.0 g. The energy value is higher: 370 kcal against 366. The light brown colour and the nutty note come from the same source.
30 and 50 kg bags, minimum order one bag; batches are made up in multiples of the pack format. Brown rice is not one of the bulky positions and ships at full weight.
Yes, and free of charge: up to 5 kg, made in 5 days. That is enough for both laboratory testing and a trial run. On request we send samples of both lines in parallel.
18 months from the batch production date. Store in dry, well-ventilated premises free from grain-store pests. For gluten-free manufacturing the AOECS scheme adds a further requirement — storage separated from gluten-containing material.
Below 20 ppm. The evidence is our current AOECS licence UA-001 and certificate No. UA0012026, valid until 6 February 2027.
Super / Super+ (SUP): enhanced microbiological limits, with the specification agreed with the customer. The scope of ISO 22000:2018 certificate No. ODS-397/QS explicitly covers flour production for baby food. The separate DKh line also serves this category, under TU U 15.8-31680679-002:2007 — rice flour DKh and buckwheat flour DKh, with a moisture norm of 9.0% maximum and a 6-month shelf life.
As standard, a quality passport or manufacturer's declaration with the measured values for the TU parameters: moisture, ash content, particle size, metal impurities, pest infestation. A COA is issued on request.
Yes. Production under the customer's own brand is a separate service: terms, pack formats and artwork approval are described on the private label page.
This page is written for food manufacturers: batches, specifications and bag formats for a production line. If you need brown rice flour in a consumer pack, from 200 g to 1 kg, it is sold through our Ms.Tally retail shop — the same product from the same producer, in retail packaging.
